You guys, it’s no secret I love dessert. Like, give me ALL THE SWEET THINGS, ALL THE TIME. But, it’s also no secret that I’ve got goals. Sugar and mystery ingredients aren’t exactly things I want to be putting in my body on the daily. So, you can see how this could become quite a predicament. But, for this problem, there is a beautiful, beautiful solution. Honey and almond flour…making Paleo desserts yummy since, well, I don’t know when. But, regardless of when those nectar-of-Heaven ingredients showed up on the scene, I am thankful.
So, with a little searching online, I stumbled upon a recipe for some pretty simple Baklava bars. Elle and I threw on our aprons, rolled up our sleeves and got to work…for all of about 30 minutes. You guys, this recipe is super easy and super yum. Enjoy, my friends!
*****Paleo Baklava Bars*****
INGREDIENTS:
1/2 cup chopped hazelnuts
1/2 chopped walnuts
1/2 cup almond meal
1/4 cup almond butter or natural peanut butter
1/4 cup honey
1/8 teaspoon salt
1.5 tablespoons coconut oil
2 tbsp coconut flour
dash cinnamon (optional)
1 tsp vanilla extract
INSTRUCTIONS:
-In a skillet or pan, lightly heat chopped nuts, almond meal, coconut oil and salt until lightly coated and toasted.
-Mix in the honey until it bubbles, then remove from heat and let it cool for 5 minutes.
-Place nut mixture in a bowl and mix in almond butter or peanut butter, extract, and coconut flour.
-Spread and flatten into an 8×8 dish to cool.
-Refrigerate or freeze for 30 minutes and slice into squares.
-Store in fridge!
